In late summer my gardens are filled with so much fresh goodness. The beautiful mounds of fresh herbs are heavenly.

I love to preserve all of this fresh goodness for the upcoming fall, winter, and spring.

Making Herb Salt

One way to enjoy this fresh goodness is to make herb salt. It’s so simple and easy to make and something you can enjoy for months.

While you can use regular table salt, I prefer Redmond’s Sea Salt or Kosher Salt for this recipe.

A food processor bowl contains fresh herbs, such as sage leaves, oregano, and thyme, along with chunks of garlic and coarse sea salt. The blade of the processor is visible.

The herbs you use are a personal choice. You can create different blends of salts by using other herbs.

You could also add lemon zest to the mix for a Mediterranean flavor.
