Proscuitto Caprese Salad
This is a lunch favorite in my house. Keeping these few simple ingredients on hand makes it a quick salad to put together.
Adding some cherry tomatoes, mozzarella, kalamata olive, and prosciutto to fresh salad greens can create the most amazing prosciutto caprese salad. Just add some bottled balsamic vinegar dressing.

Proscuitto Caprese Salad
Ingredients
- 4 cups mixed greens
- 1 tbsp fresh basil chopped fine
- 1/2 6 oz. pkg., of prosciutto cut into bite sized pieces
- 10 Ciliegine mozzarella balls cut in half
- 10 cherry tomatoes cut in half
- 2 tbsp sliced kalamata olives
- 3 green onions, sliced very fine
- bottled balsamic vinegarette dressing I like Trader Joe's brand
Instructions
- Mix the greens with all the remaining ingredients
- Use as much dressing as is appropriate for you. I use 1 tablespoon.
Prepping for Lunch
Salad for lunch is my go to but it only seems to work if I have all the ingredients on hand and prepped. I spend a little time on Sunday washing my lettuce and vegetables and chopping everything up. Then I store it in glass containers. This makes putting salads together a snap during the week.
